If your coconut milk has fat and water separation, pour the contents of the can into a jar or microwave-safe bowl and microwave for 30 seconds to 1 minute or until creamy.

The crust will take longer than you may think to process, so just be patient while the food processor is doing its thing. You can always help it along by stopping the food processor to scrape the sides with a rubber spatula every minute or two.

To ensure the peanut butter filling blends easily, first blend the coconut milk and peanut butter together in the blender, then add the soaked cashews, sugar-free confectioners sweetener, vanilla extract, and sea salt to finish blending. This will just make blending the cashews easier.

To give this peanut butter pie a cheesecake vibe, add to 1/2 cup of fresh lemon juice to the peanut butter filling. It may sound strange, but the lemon juice will mimic the tang of the cream cheese and give it a peanut butter cheesecake vibe.

How To Make Keto Chicken Curry

Prepare the tomato by quartering and then pulsing in a food processor. You can very finely dice if you prefer but pulsing in a food processor yields the best flavor and texture to the curry.

Heat2 tablespoons of olive oil in a non stick frying pan or Dutch oven. Add the chicken and cook for 6 minutes until golden on the outside. The chicken will not be fully cooked at this stage.

Add the onion, garlic and ginger. Fry for 2 minutes then add the red chili pepper and spices for 1 further minute. If using a Dutch oven you may need to deglaze the pan with a little water to stop sticking. I used 3 tablespoons of water.

Next add the tomato, chicken stock, peanut butter, coconut aminos, salt and pepper. Bring to a boil then simmer on medium / low for 10 minutes.

Stirin the coconut milk and cook for a further 5 minutes on a medium heat.

Add the green beans and juice of the lime and cook for 3 minutes or until the beans are el dente. Check that the chicken is cooked through by inserting an internal thermometer that registers 165 degrees F. Taste and adjust seasoning and lime to taste.

Serve with toasted almonds or toasted coconut flakes, fresh coriander and optional cumin and coriander cauliflower rice.

Is Shakeology Dairy Free

Shakeology comes in some Vegan flavors which dont contain dairy but theyre processed in a factory that does so there might be some chance for cross contamination. There are no options for Shakeology that are marketed as dairy free unfortunately. Since Shakeology is not particularly low carb you might not have to worry about it too much!

Store any leftover peanut butter pie in an airtight container in the refrigerator for up to 10 days or wrap the pie in plastic wrap for storage. You can also store it in a zip lock back in the freezer for up to 3 months.
