Luckily, not all is lost for egg lovers, as there are a number of ways you can cut down on fat and calories in deviled eggs. While you can use reduced-fat or light mayo in place of the traditional kind to reduce the calories, the American Heart Association also recommends decreasing the total number of egg yolks you use in making the deviled egg filling.
For example, when you make a batch of deviled eggs out of one dozen eggs, you only need to use eight to 10 yolks to make the filling. Although you will still get the taste of the creamy yolks, this tactic cuts calories from each serving.
Thomas Jefferson University Hospital recommends replacing the mayonnaise that’s traditionally used in deviled eggs with fat-free Greek yogurt. Not only does it decrease the amount of fat in deviled eggs, but it also increases the nutritional value by providing calcium and vitamin D.
You could also whip cottage cheese until it’s smooth and use it to replace part or all of the mayonnaise, as well as increase the protein content of your deviled eggs by using hummus in the filling. For an increase in healthy fats and some ultra-tasty deviled eggs, whip avocado into the filling.
Keto Deviled Eggs A Great Snack
Deviled eggs are a classic dish. Theyre the perfect finger food to serve at dinner parties-no forks needed.
At the same time, they also make a nice everyday snack. These keto deviled eggs are creamy and packed with flavor.
Theyre also pretty cheap to make too. So, theyre the perfect snack if youre on a budget. It takes very little time to make them too.
In fact, itll take you under 20 minutes to make them. And since it makes 6 servings, theyre good for keto meal prep. Do keep in mind that they last 3 to 4 days in the fridge. Though I prefer to eat mine within 2 days. To keep them fresh, make sure you store them in a good airtight storage container.
I recommend these storage containers because they are made out of glass thus will help your food last longer. I dont recommend keeping these deviled eggs in the freezer, as the texture wont be great once you thaw them.
If youre having trouble using them up, you can also use them in your lunches too. For instance, you can use them to make a pretty tasty Caesar salad, use them in lettuce wraps, or toss them with some sautéed broccoli and bacon.
Yum! What I love most about these deviled eggs is that you dont need a ton of ingredients. And as an added bonus, theyre ingredients you probably already have at home.
If not, you can make simple substitutions.
How To Make Keto Deviled Eggs
Bring 1 inch of water to a rolling boil over high heat. Place the eggs in a steamer basket, transfer the basket to the saucepan, cover, and reduce the heat to medium-low.
Cook for 13 minutes.
While the eggs are cooking, fill a large bowl with ice cubes and water.
When the eggs are done cooking, use a slotted spoon to transfer to the ice bath. Allow them to sit for 15 minutes.
Peel the eggs and scoop out the yolks.
Place the yolks in a large bowl and mash together with the mayonnaise, chopped pickle, mustard, hot sauce, salt, and pepper. You could also pulse the mixture in a food processor until smooth.
Spoon or pipe the filling into the egg white halves. Sprinkle with the paprika and top with crumbled bacon and fresh herbs if desired.

Start by hard boiling eggs. My favorite way to make hard boiled eggs is in the Instant Pot. They are SOOOOOO easy to peel when you cook them this way.
Heres how to make eggs in the Instant Pot: Place 1 cup water in the bottom of your Instant Pot. Add the trivet and place 6 eggs on the trivet. Cover and lock the lid. Cook for 6 minutes. Perform a quick release & put in an ice bath for 5 mins.
Like I said, this is the best way to make easy to peel eggs, in my opinion.
But, theres more than one way to hard boil eggs
How to make eggs on the stove top: You can also cook the eggs on the stovetop by bringing a pot of water to a rolling boil. Carefully add the eggs to the pot of boiling water.
I like to use a slotted spoon to gently place them into the pot to avoid cracking the shells.
Boil the eggs for 10-12 minutes.
Plunge them into a bowl of cold water and ice when the eggs are done, then peel. Slice eggs in half lengthwise and set the egg whites aside.
Place egg yolks in a small to medium sized bowl and mash well using a fork to break up lumps.
Add mayo, yellow mustard, salt, and pepper to taste and mix together well.
Add the yolk filling back into the egg halves using a small spoon. Or, if youre feeling fancy, you can use a piping bag to fill the egg halves with the egg yolk mixture.
How Long To Boil Eggs For Deviled Eggs
As much as I like the jammy yolks in soft-boiled eggs, I want a firm yolk for deviled eggs. To get a firm yolk every time, I put uncooked eggs in a pot of cool water over medium heat. After the water starts boiling, I boil the eggs for a total of 9-10 minutes.
A gray ring around your egg yolks indicates that they may have been overcooked a bit. For these low carb deviled eggs, I really dont think this is a big deal. If anything, I think its better to slightly overcook eggs for deviled eggs rather than undercook them.
Some people prefer to steam eggs for deviled eggs instead of boiling them. You can steam eggs in an Instant Pot with good success, and supposedly theyre easy to peel.
