How To Tell If Shrimp Is Undercooked
The way I learned it is both fish and shellfish should be cooked to a safe minimum internal temperature of 145 degrees Fahrenheit. This recommendation is right on the USDA website.
In truth, its difficult to get thick shellfish to 145 internally in the air fryer without overcooking them. Ive seen some bloggers recommend cooking shellfish to lower temps to work around this.
But is it safe? If you look on FoodSafety.gov, the rules are a little different. There, the recommendation to cook finfish to 145F still stands.
However, they recommend that shellfish like shrimp be cooked until flesh is pearly or white, and opaque. No safe minimum internal temperature is given.
If youre air frying frozen shrimp, it can be difficult to determine doneness simply by looking at the exterior. You could end up with a pink outside with an inside that is still raw.
So, what should you do? For extra large shrimp and smaller, you should be able to get the shrimp to 145F without overcooking. You can use a meat thermometer to check the temperature of your shrimp if youre unsure whether theyre done.
For colossal shrimp, I would try cutting a shrimp open after cooking to ensure the middle is pearly or white and opaque. Trying to get shrimp that large to 145F may lead to overcooked shrimp.

Cooking Options For Spring Rolls
If must have the outer crunch of the classic, fried egg roll, you can try these alternate cooking methods to keep the food healthy:
Air fry the spring rolls. You simply spoon your vegetable and shrimp concoction onto the spring roll and brush the corners with water to make them stick. According to a December 2017 study from the Journal of Food Science, air fryers present an alternative thermal process for cooking fish, which is both more convenient and healthier than using oil.
You can also grill the proteins to make the spring roll warm, as an egg roll would be. You could try grilling the shrimp and immediately transferring them onto the rice paper and eating them right away. Foodsafety.gov says you should cook the shrimp until the flesh is pearly or white for safe eating. Raw seafood can contain toxins such as mercury or bacteria. But grills marks are welcome.
Shrimp And Disease Prevention
Because of the amazing nutrients that shrimp provides, the seafood may help prevent certain diseases. In fact, the omega-3s that shrimp contains may help prevent cardiovascular disease, found a review study in Nutrients.
Studies show that increasing your consumption of EPA and DHA omega-3s by 1 gram per day may reduce your risk of cardiovascular disease by 5.8 percent, Chou says. For reference, a 3-ounce serving of shrimp contains approximately 0.12 grams of each.
Eating shrimp also helps decrease inflammation in the body. Free radicals are unstable particles in the body that can damage cells and lead to inflammation, McDowell says. Research indicates that chronic inflammation can lead to higher instances of premature aging and diseases such as heart disease, certain cancers, dementia, and diabetes. Antioxidants help the body fight free radicals.
Plus, shrimp boasts iodine. This is an important mineral for thyroid and brain health, Chou says. Adequate iodine intake is important for preventing goiter.
Goiter is an abnormal enlarged thyroid gland that can make it hard to breathe or swallow. Youll get additional thyroid-benefitting nutrients from shrimp. We need selenium, zinc, copper, iodine, and calcium for our thyroids to function properly, and shrimp contains all five of these minerals, McDowell says.

How To Prep And Cook Shrimp
In a perfect world, shrimp would be bought fresh and used as such, says Gerard Viverito, an associate professor of culinary arts at the Culinary Institute of America. Unfortunately, due to shipping, they are frozen because of their extremely high perishability.
So unless you live on the coasts, the available shrimp will probably be frozen. Be aware of buying thawed shrimp at the supermarket and mistaking it for fresh, says TJ Delle Donne, an assistant dean in the College of Food Innovation and Technology at Johnson & Wales University. In general, he recommends choosing frozen products and thawing them at home rather than buying already-thawed shrimp.
The best and safest way to thaw frozen shrimp is to move them from the freezer to the refrigerator, Donne says. This will allow the shrimp to thaw at a safe rate and avoid the dreaded time/temperature abuse, and ensure a firm re-thermalized i.e., not soggy product.
If youre pressed for time, you can also thaw frozen shrimp by putting them in a bowl and placing it in the sink under a faucet set to run cool water in a slow stream, Viverito says.
Once your shrimp are thawed, you have a decision to make to peel or not to peel. For Viverito, the answer depends on the cooking method: for grilled or peel-and-eat steamed shrimp, he typically keeps the shell on. For sautéed dishes or anything that calls for a more upscale presentation, he peels them before cooking.

Shrimp Nutrition: Grilled Vs Fried
The nutrition value of shrimp will vary depending on how it is prepared. Grilled shrimp will have a healthier nutrition profile than fried shrimp, for example.
Fried shrimp also contains a fair amount of carbs, unlike grilled shrimp or shrimp cocktail.
Grilled shrimp is a healthy option and easy to prepare. Cooking shrimp with oil adds way more calories and fat than you might realize, so do so sparingly.
Alternatively, you can use a cooking spray to avoid adding extra calories to grilled shrimp.
Grilled shrimp can be a low-calorie option if you cook them with very little added oil. Eight grilled shrimp have 44 to 52 calories, with less than one gram of carbohydrates. The majority of the calories in grilled shrimp comes from its protein.
Fried Shrimp Nutrition vs. Grilled Shrimp Nutrition
As you can see, the calories in fried shrimp are far greater than those in grilled shrimp. Fried shrimp is not as healthy a pick as grilled because it contains excess calories and fat.
The carbs in fried shrimp especially stand out because when grilled or boiled, shrimp contains virtually no carbohydrates.
A 9-piece serving of fried shrimp also contains 1,050 milligrams of sodium , while grilled or cooked shrimp contains 417 milligrams of sodium .
If you’re eating shrimp cocktail, know that its nutritional profile is very similar to that of grilled or cooked shrimp. Just be mindful of the cocktail sauce, which often contains added sugars.

Is A Shrimp Cocktail Healthy
If youre looking for a finger snack that is nutritionally sound, shrimp cocktail is one of the best alternatives available. Consider: The protein content of one giant shrimp is more than a gram, despite the fact that it has just 7 calories and nearly little fat. A cocktail-sized pig in a blanket, on the other hand, contains 67 calories, 6 grams of fat, and 1.5 grams of protein per serving.
Okay But What About Cholesterol
Like most forms of animal protein, shrimp is high in cholesterol. But its bad rap is unwarranted. Its higher in cholesterol than most seafood, but dietary cholesterol has only a small effect on blood cholesterol, says Danowski.
Its still true that a diet high in cholesterol can increase your risk of developing coronary heart disease, says Danowski. The American Heart Association recommends less than 300 mg of cholesterol a day, and shrimp contains 161 mg in a four ounce serving. However, thats minimal compared to the majority of processed foods and red meats in the standard American diet.
Plus, as Danowski points out, its far more important to limit saturated fat intake than dietary cholesterol when it comes to heart health.
