Spinach Artichoke Dip, Low Carb, Keto, Vegetarian | Black Tie Kitchen

Animal studies in 2016 conducted by the Pakistan Journal of Pharmacological Science reported that artichoke extract delivered by injection normalized kidney function in rats with drug-induced kidney disease. However these same effects have yet to be demonstrated and studied in humans. The general rule of thumb though is its ok to have artichokes in a kidney friendly but in moderation. This is because of their high potassium content.

Tips For Keto Artichoke Hearts

  • When you’re preparing these to bake, really work in the garlic, parmesan mixture to the folds in the artichoke. It will hold on to it better while baking.
  • Please use a good quality olive oil when baking this recipe. The olive oil acts almost as a dressing for these artichokes so you’ll want the nice flavor of a quality oil.
  • Though not traditional, a lot of people love to melt mozzarella over the tops of them right before removing from the oven. I’ve never done this before but it sounds delicious, so I’ll try that with my next batch.
  • Even though these artichokes heart are perfect served just they way they are as a Keto side dish, you can also serve them as an appetizer with you favorite low carb dipping sauce or dressing. Try this Creamy Garlic Italian Dressing or this Homemade Caesar Dressing with them.

Note: The 16 ounces of artichoke hearts does not include the liquid that comes in the jar/can. I was able to get 38 artichoke halves from the 26 ounce jar of artichoke hearts I used. The size of the artichoke hearts could vary by package/manufacturer.

They’re Full Of Nutrients

As Kirchherr mentions above, these little veggies are chock-full of important nutrients, like vitamin C, vitamin A, and iron, “as well as potassium and antioxidants,” she says.

Here’s the full nutrition breakdown of one medium artichoke:

Its no secret that fiber helps move your digestion along and keeps you feeling full, but it also offers more long-term benefits like a lower risk of heart disease. According to Sollid, a half cup of artichokes contains about seven grams of fiber, or more than a quarter of the amount recommended for women and nearly a fifth of the amount recommended for men. “Americans only eat about half the amount of fiber that’s recommended per day,” he says, so a serving of artichoke is certainly a step in the right direction.

4. They can strengthen your gut.

Artichokes are full of inulin, according to Sollid, which is a “unique form of fiber known to help prevent gastrointestinal issues like constipation, enhance the absorption of minerals like calcium, and bolster your immune system.”

According to a study from the British Journal of Nutrition, inulin also works as a prebiotic, which helps your body maintain a healthy gut.

5. They may boost your immune system.

Orange juice isnt the only thing thatll help keep you from contracting your co-workers cold. In fact, theJournal of Agriculture and Food Chemistry ranked artichokes high up on the list of immune-boosting, antioxidant-rich foods.

6. Theyre high in polyphenols.

Whats The Key Takeaway Then

There are two key takeaways from this adventure.

First, go ahead and enjoy artichokes on your new keto diet. You can even still have that amazing artichoke dip that we all love so much.

Second, always double-check new information about anything. Even the USDA FoodData Database seems to have some mistakes.

I give things a quick common-sense check, which is what I did when I saw the data from the database. Having failed that simple test, I went looking for other sources of information.

With that, I finally arrived at the right answer.

Keto on!

Okay, that table was shocking to me.

Thats quite a lot of net carbs and at that level, artichokes would be questionably keto-friendly for those experienced keto dieters who are pretty carb tolerant.

Her husband was correct about what was in the database, but I still didnt think he was correct about the carbs in artichokes and now I was questioning the database.
