Wheat flour, vegetable oil, skim milk cheese, salt, and spices are used to make the rectangular crackers, measuring 26 by 24 millimeters . Theyre composed entirely of actual cheddar cheese. Almond Flour Vs Almond Meal

This recipe calls for blanched almond flour, not to be confused with almond meal. The biggest difference between the two is that almond meal is essentially ground almonds with the skin and everything intact. This creates a more granular texture, where the almond flour is more like, well, flour.

As youd expect with any flour, the more processed they become, the more concentrated the calorie source they become. Meaning, almond flour is more calorically dense than almond meal. I tell you this to say that using almond meal in this recipe could be a way to reduce the calories, but your crackers will be a bit denser .

If you try using almond meal instead of almond flour, you may need to add an egg or a modify the dry ingredients slightly to get the dough consistency right.

How To Make Keto Cheese Crackers

While typical fat head dough takes a bit of time to melt the cheese then incorporate all the remaining ingredients, I have simplified this recipe by using the food processor.

This is one of the best ideas I have ever had to simply place all ingredients into the food processor and then roll it out.

It has worked fabulously for my other fat head dough recipes as well, like my Strawberry Cream Cheese Cinnamon Rolls.

Once the dough has processed, you easily roll dough between a piece of parchment paper, lay on a cookie sheet pan, slice into tiny squares with a pastry cutter or pizza cutter, and add that hole in the center and then bake!

Step 1: Preheat the oven and cover the cookie sheet with parchment paper. Do not use wax paper. If you do, the cheese will stick and be almost impossible to remove.

Step 2: Lay cheese slices flat to fill the cookie sheet. Leave a little bit of room between each slice. If they melt together it is no big deal as once they cool, they will break apart easily. I used pre-cut slices, but you can buy larger deli slices and cut them into smaller squares.

Step 4: Sprinkle spices on cheese slices.

Step 5: BakeThe baking time may vary depending on what kind of cheese you use, thickness, and variances in oven temperature.

Step 6: Remove from the oven and allow to cool. Once they cool you can easily break apart any cheese slices that have melted together.

  • The first time I tested this recipe, I included almost half of the cheese amount using grated parmesan. They just didn’t look like cheez-its, I wanted that nice color so I went with all cheddar jack on my further attempts.
  • If you’re into other spices go ahead and change out what you like, maybe even some chili powder, red pepper flakes or cayenne pepper.
  • If you can’t find Cheddar Jack cheese, sharp cheddar or regular cheddar cheese is fine and then shred it.
