What Are Some Other Keto Desserts
One that that many people find difficult when starting keto is that sugar is off limits. For many people that is a nonstarter. However, there are many great sugar alternatives which can help satisfy your sweet tooth and stay on your low carb diet.
My two favorite sweeteners is Swerve, which is a natural zero calorie sweetener that has no effect on your blood sugar. It comes in granular, brown sugar and confectioners. I also really like monkfruit sweetener, which is what I used here. For some Swerve can have a cooling effect after they eat so for those people monkfruit is a very good keto friendly sweetener .
For the most part, you can find a keto recipe for just about any classic dessert, however I wanted to share a few I love. One of my favorites are these Keto Cheesecake Stuffed Brownies. Chip Off The Old Block
These days I use a low carb chip but the starting point for this recipe was the classic yellow bag of Nestle Toll House Morselsthe ultimate in chocolate chip cookies. The bar was set high, and believe me when I tell you there were dozens of test batches before reaching a cookie that was worthy of the comparison.
Alternative baking can have its challenges I wanted a dough that was easy to make and easy to enjoy. I didnt want tons of chill time required The result is one of my all-time favorite low carb spins. These cookies are my weakness. I literally only make them for the blog Otherwise, Id eat theseand nothing else.

Vanilla Or Chocolate Keto Ice Cream
The vanilla keto ice cream recipe is listed below. You can use either pure vanilla extract or vanilla bean paste. Or scrape out the seeds of one vanilla bean.
To make chocolate ice cream, simply stir in one fourth cup of regular unsweetened cocoa powder along with the other ingredients. Thats it!
You can also recreate your favorite Halo Top, Rebel, or Enlightened ice cream flavors at home. Turn the basic keto ice cream recipe into unlimited new flavors, simply by experimenting with different extracts and add-ins.
Stir in diced strawberries to make strawberry ice cream, pecans and butter extract for butter pecan, half a teaspoon of instant coffee, a handful of shredded coconut, or pure peppermint extract and chopped dark chocolate to get mint chocolate chip.

What If I Want My Chocolate Chip Cookies Fluffier
That is an easy fix! If you want even FLUFFIER keto chocolate chip cookies, then you add in the optional coconut flour. The above cookies have no coconut flour and the below cookies DO have the coconut flour. Do you see the difference?
AND if you want them even FLUFFIER, then use the coconut flour and plop them down without smoothing out the edges. Meaning, don’t roll a ball, just scoop and blob and plot it down.
Then you’ll end up cookies like this:

How To Bake Cookies With Almond Flour
Surprisingly Almond flour really works well for a lot of different baking recipes such as cookies, cakes, muffins, pie crusts, oh and pancakes.
The only type of dessert that doesnt do well with almond flour is yeast bread or other types of bread recipes. It just doesnt work as well.
I dont like regular almonds, but thats ok because almond flour really doesnt taste like almonds unless you add an almond extract.
You can buy almond flour at the grocery store, or you can even make your own. Keep in mind that approximately 1 cup of balanced almonds will make about 1 ¼ cups of almond flour.
What Is The Secret Ingredient
After speaking to our friend Deana, the founder of Good Dees baking mixes, we learned beef gelatin powder is her secret keto baking ingredient. Beef or pork gelatin powder gives cookies and other keto baked goods a chewy texture, and you can easily find it at your local grocery store or online.
Plus gelatin is gluten free and sugar free so no keto concerns there. Most keto cookie recipes do not use gelatin, but we think its definitely necessary to make the best keto chocolate chip cookies.

I know people have very different views on how much fat to eat in a day, so while my own diet is pretty high in fatas shown in the post I wrote on What I Eat In A Dayit will of course depend on your own personal views and dietary needs.

Can Sugar Free Cookies Actually Taste Good
Growing up, whenever wed go to my grandparents house there would be two sections of treats in the cabinet.
One was the regular, full-of-fat-and-sugar junk food section specifically for us kids. The other was comprised of sugar-free JELL-O, granola bars, and low carb cookies for my grandfather who had Diabetes.
One afternoon, I was curious and snuck off with one of the sugar free peanut butter cookies in the not for children stash.
All I remember of that cookie was an artificial aspartame taste that lingered long after the first bite was gone. And I definitely didnt take a second bite!
Thankfully, sugar free desserts have come a long way, and you have numerous options from which to choose if you need to bake without sugar.
For this particular recipe, both powdered erythritol and Sugar Free Powdered Sugar will work. The photos in this post are of keto cookies made with the former.
If Im making the cookies for myself or to serve a crowd not on the keto diet, Ill just use regular powdered sugar or powdered coconut sugar, both of which work fine here as well.

Can You Freeze Low Carb Chocolate Chip Cookies
Absolutely! These chewy keto chocolate chip cookies freeze oh-so-well. Place them on a baking sheet in a single, non-touching layer and toss them in your freezer for 1 hour. Remove the partially frozen cookies to a resealable bag this prevents your low carb chocolate chip cookies from sticking together in the freezer.

Soften Your Butter Naturally
You dont want to overheat your butter by softening in the microwave or on the stove. Just cut it into slices and let it sit out for 10 to 15 minutes, and itll be perfect for creaming.
Of course, if its summer or youve been cooking a lot, youll need less time. A kitchen that is much warmer than 70 degrees F will speed up this process.
If youre in a hurry, you can soften the butter by placing it in an airtight bag and letting it sit in some warm water.
Why Do I Use Parchment Paper
Parchment paper or a silicone-line mat cookie sheet ensures that the cookies remove easily from the baking pan. This in turn will help your cookies turn out perfectly browned without worry of sticking.
Another reason is that the parchment paper acts as a buffer. Without the paper, the cookie dough that you form will get soaked by melted butter. This will cause the cookies to spread too much. That’s why I never put hot cookie dough directly on pans.

How Many Net Carb Per Keto Chocolate Chip Cookie
3 Net Carbs per chocolate chip cookie when you end up baking 12 cookies from the dough.
The 3 Net Carbs is by subtracting the sugar alcohol erythritol to calculate the net carbs.
Last week though we found out that only about 50 percent of our readers do this though! My family does subtract the sugar alcohols and Iâll continue to provide that sugar alcohol grams above the nutrition card below and you can decide for yourself if you want to follow that.
PLEASE do not shame or be mean to others who might do things a little differently. That is not what we are about here.

Gently Pat The Dough Into Your Cookie Scoop
Once youve got your dough ready to scoop onto the cookie sheet, youre almost done.
All you have to do is gently pat it into the scoop this is important. If its too loose, it wont stay together once you release it.

What Are Fat Bombs
