Directions For Sugar Free Eggnog

Pour the coconut milk, heavy cream and water into a large or medium saucepan, add the cinnamon stick and bring to a boil. Simmer over medium heat and continually stir for 5 minutes. If you are using an electric stove top you may need to move your pan on and off the heat to keep it at a simmer but to keep it from spilling over. Turn off heat.

In a large bowl, add the egg yolks and confectioners sweetener. Whisk the egg mixture together.

Add a small amount of the hot cream mixture to the eggs to temper them. Whisk together and continue to add about half of the cream mixture to the tempered eggs a little at a time. Remove cinnamon stick from saucepan.

Pour the tempered egg yolk mixture back into the hot cream, whisking in slowly over low heat, in the saucepan, until completely smooth.

Continue to stir the mixture over low heat for about 5-8 minutes or until the temperature reaches 160 degrees F and coats the back of a spoon. Sprinkle gelatin over mixture and whisk constantly until smooth, no lumps.

Remove from the heat and stir in rum and vanilla extract. Stir together until smooth.

Taste and adjust sweetener and rum if needed, then set aside.

How to Prepare Eggnog Pie

Place the cream cheese and vanilla stevia in a stand mixer or use an electric hand mixer and blend until smooth. Taste and adjust sweetener if needed. Set aside.

Once your eggnog is ready, slowly add it to the cream cheese in the mixer and blend on low speed until incorporated and smooth.

Almond Flour For Gluten Free Keto Treats

One of the most used flours in keto baking is almond flour. This is essentially ground almonds and it is primarily what I use in my keto dessert recipes.

Almond flour is expensive, but I can usually find it at wholesale stores for a better deal. If you do not have a wholesale store near you, you can find almond flour at almost any grocery store or it can be purchased on Amazon.

You will find there are different types of almond flour such as finely ground and blanched. I usually go for finely ground as it has the best texture.

Even though almond flour is more expensive than coconut flour…it is much less temperamental and yields more consistent results, especially if it is weighed with a food scale as opposed to using measuring cups.

Sugar Free Sweeteners For Low Carb Desserts


My favorite keto sweeteners for keto desserts are Swerve and Lakanto.

Swerve is a brand that is made with a combination of erythritol and stevia plus their own proprietary flavorings. It is a 1 for 1 substitute for sugar, unlike pure stevia. It makes very tasty keto baked goods and it is found at Walmart, Whole Foods, or Amazon. They make a granulated version, powdered, and brown sugar.

Lakanto is another version I really like but it can only be found online. It is made with Monk fruit and is also a 1 for 1 substitute for sugar and comes in granular, powdered, and brown sugar varieties.

I prefer the taste of the Lakanto as it has less of a cooling effect. I think it is the closest to sugar as you can get at the moment.

How To Store Keto Fluff

Just like other low-carb cream cheese desserts, this needs to be refrigerated. Store it in an airtight container in the refrigerator. It will stay fresh for about 4-5 days.

Can you freeze a low-carb dessert with cream cheese?

Yes, you can but the texture will change. Instead of being light and fluffy, it will become a hard block, kind of like a solid block of ice cream.

As it thaws, it will be easier to eat, but it still won’t have the same fluffy texture.

ONE Minute NO BAKE Cheesecake Low Carb ð?° Best Easy Sugar Free Dessert Recipes

My low carb gluten-free crust is so yummy that you won’t miss the graham crackers you’d use in a traditional cheesecake at all. However, I always get questions on how to substitute ingredients, so I have summed up all crust variations I can think of:

Almond flour crust. If you don’t want to use coconut flour, omit it and use 1 ½ cup or 150 grams of almond flour in total.

Coconut flour crust. I know some of my readers are allergic to almond flour. In this case, use ½ cup / 60g of coconut flour to make the crust. You need less coconut flour because it absorbs more liquid than almond flour.

Use other nuts. You can replace the almond flour with other nut flours! Ground pecans or walnuts would work well. If you want to steer away from nuts altogether, you could also consider using sunflower seed meal. Replace these options 1:1 with the almond flour.

Dairy-free crust. To make the crust dairy free, replace the butter with the same amount of coconut oil or ghee.

No crust. Yes, even this is an option! You actually don’t need the crust at all. If you omit it, be sure to line the bottom of the cake tin with parchment paper so you can remove the base easily.

Add Sweeteners And Extracts

At this point, it’s time to add sweetener and flavor extracts . I love using a mix of erythritol and stevia along with stevia extract powder. But, feel free to use the sweetener of your choice.

You can always taste test to get the amount right of sweetener. The recipe needs about ½ to ¾ of sugar replacement depending on how sweet you like it.

For the extracts, I use vanilla and lemon. However, feel free to experiment with different ones to change up the taste!

How To Make Keto Chocolate Cake

1.) Whisk the eggs with a hand mixer in a large mixing bowl until they have doubled in size and are frothy.

You want to make sure that the eggs are ROOM TEMPERATURE. If you forgot to take them our 30 minutes before starting on the cake, you can always warm them up in a bowl with hot water.

Keeping the eggs at room temperature prevents the mix from splitting and becoming lumpy once you add the warm chocolate and butter.

2.) Add the powdered erythritol and whisk again until well-combined.

Tip: If you only have granulated sweetener, blitz it in a food processor or with the attachment of a stick blender to turn it into a powder. You don’t want any crunchy bits in your gooey, moist chocolate cake!

TASTE the cake batter and add more sweetener if necessary. I don’t have much of a sweet tooth, so you may prefer it a little sweeter than I do.

3.) Melt butter and chocolate and stir until combined. You can do this in a microwave or on the stove – but slowly and gently. TAKE YOUR TIME!!! If the chocolate gets too hot too quickly, it can seize or separate.

Then add the mix to the bowl and fold it in with a spatula or spoon.

4.) See how it’s slowly coming together?

5. And this is how it should look like – gooey, creamy goodness!

6.) Lastly, you add the almond flour / ground almonds and stir until they are evenly distributed.

Let the cake cool completely before cutting.
