Most freezable breakfast bowl recipes use potatoes for the base. Obviously thats not an option for me, or for you. So I used the classic potato replacement: cauliflower.I decided to roast the cauliflower first, to help remove moisture and to amp up the flavor. Then I topped each with some breakfast sausage, scrambled eggs, green onion, and plenty of Cabot Seriously Sharp.

How To Roll A Breakfast Burrito
Rolling a burrito is not hard to do it just needs to be tight enough, so the filling does not fall out when you eat it. In this egg and bacon burrito casserole, I did not tuck the ends in, but you will want to do this if you plan on eating the burrito with your hands.
Step 1: Place the filling in the center of your burrito.
Step 2: If making a hand-held burrito, fold the left and right sides of the burrito inward, slightly overlapping the filling. If making a burrito casserole as I did in this recipe, you do not need to fold the sides in since you will be eating these with a fork and knife.
Step 3: Then start to roll by tucking the bottom of the tortilla underneath the filling and, while keeping the sides folded inward, roll until nice and tight.

The great thing about this keto breakfast casserole is that you can make it right before you plan to serve it. Or you can bake it ahead of time so its ready to serve any time!
Its a recipe thats perfect to make ahead of time. I recommend fully cooking the casserole before chilling or freezing. That way, it just needs reheating before serving.
How To Make Keto Breakfast Burritos
Heat a skillet on medium high heat then add the butter. While its melting, dice up the onion, pepper and ham into small cubes. Add all three to the melted butter and fry until the edges of the ham have crisped and the onion is translucent. Reduce the heat to low.
Scramble the eggs with heavy whipping cream, salt and pepper. Add to the fried ham and continue stirring until the eggs are fully cooked. Remove from the heat.
Shred the cheese then lay out 16 tortillas. Place 1/3 cup egg mixture onto the center of each tortilla in a log shape and top with 2 tbsp grated cheese.
Roll up the Keto Breakfast Burritos. The best way to do this is to fold the edge closest to your body over the eggs and hold it in place while you fold the side edges over the log. Holding the three edges in place, tightly roll the log over until youve reached the other end of the tortilla.
Stack the burritos as you go to keep them folded.
Wrap each Keto Breakfast Burrito in tin foil. Place into freezer safe ziploc bags and store in the freezer.
