This easy recipe makes Low-Carb Gingerbread Cookies loaded with spicy, melt-in-your-mouth goodness. This recipe uses almond flour and a monk fruit blend sweetener. These ingredients make these cookies a perfect choice for diabetics or those living a low-carb, gluten-free, or keto lifestyle.

Which Gluten Free Flour Is Best For Cookies

You’ll notice one common ingredient in most Keto cookie recipes is almond flour. That’s because it contains only one ingredient, ALMONDS! And since almonds are full of healthy fat, that makes cookies made with almond flour a great Keto sweet treat.

When you mix almond flour with another gluten free ingredient, like oat fiber or coconut flour, you can achieve the same wonderful texture of traditional cookies without all the carbs.

How To Store Keto Peanut Butter Cookies

As I mentioned, this recipe will make about 14 sugar free cookies depending on how big you make them. And if you have some leftover, you’re in luck because they’re insanely delicious the next few days!

So transfer the leftover cookies to an airtight container and they’ll stay good at room temperature for about 2 weeks but are best eaten within a week.

And if you want to keep them for longer, you have freeze them in a freezer bag or container for up to 2 months. And they’re a delicious frozen treat, but if you want, you can let the cookies thaw at room temperature or in the fridge before enjoying.

Picking A Low Carb/ Keto Chocolate Chip

You cant make chocolate chip cookies keto without sugar free chocolate. There are many brands online that make keto chocolate chips . If you search keto chocolate chip on amazon youll find hundreds. However, we have specific standards when picking a chocolate chip for our keto cookies. It must be sugar free made with either erythritol, stevia, monk fruit, or allulose. Anything with maltitol sends us off running.

When we search keto chocolate chip, we always choose the Lilys brand for its quality ingredients and delicious flavor. They use a blend of stevia and erythritol, two high quality sweeteners perfect for a keto diet.

Are Sugar Free Cookies Good For Diabetics

Low Carb Almond Flour Chocolate Chip Cookies

Filled with low carb ingredients, they do not raise your blood sugar as an ordinary cookie will. Therefore you can indulge in them any time of the day. No worries about ending up with high numbers just after one bite.

Although they all are very low in carbohydrates, you will have to watch out, especially if you enjoy more pieces than you would typically plan.

Remember, even keto flour has some carbs, which need to be accounted for.

How To Make Keto Ice Cream

Stir together the milk, sweetener of choice, salt, and pure vanilla extract. If making chocolate ice cream, stir in the cocoa powder too.

If you have an ice cream maker, prepare the machine according to the manual specific to your brand and model.

Churn according to manufacturers instructions. I have a Cuisinart ice cream machine, which takes around fifteen minutes to make ice cream.

For a no churn version without an ice cream maker, freeze the mixture in ice cube trays, which can be purchased for as little as two dollars at most grocery stores or home stores like Bed Bath Beyond.

Then blend the frozen ice cubes in a Vitamix, or thaw enough to blend in a food processor or a regular blender. I like to scoop it out with an ice cream scoop for an authentic ice cream shape.

The homemade keto ice cream recipe can be vegan, paleo, egg free, dairy free, low carb, sugar free, soy free, and gluten free.

Why I Use Ghee In These Dairy

I know all too well that specific dietary requirements determine what a person can or cannot eat. Thats why I was so determined to make these cookies dairy-free for those who are lactose intolerant or choose to limit their dairy consumption. I love to use ghee for dairy-free recipes!

Ghee is melted butter with the lactose removed. For those with lactose intolerance, who follow a paleo diet, or just prefer to eat dairy-free, ghee is about to be your new best friend.

Ghee contains MCTs making them a perfect nutritional fuel source, especially for all of my keto dieter friends out there.

Serious dairy allergy where ghee isnt an option for you? No problem. Simply sub in coconut oil for ghee at a 1:1 ratio.

Note, though, that the nutrition information will slightly change if you sub coconut oil for ghee.

How To Substitute A Different Sweetener This Sugar

I used a sweetener that is a monkfruit erythritol blend that is a one to one substitute with sugar. There are many brands with this blend available. While this blend works well in this recipe, other sweeteners may be use successfully.

A blend with stevia and erythritol with a one to one substitute with sugar would work well in this recipe. To make this substitute, you can simply use the same amount of sweetener.

One of my favorite sweeteners, a stevia and erythritol that is twice as sweet as sugar made by the company, Pyure will also work in this cookies. To use this sweetener, you will need to decrease the amount to 3 Tablespoons to 1/4 cup, depending on how sweet you like your cookies. Using this sweetener will give the added advantage of having less of a cooling effect than the sweeteners that require you to use more to achieve the same sweetness level. Another advantage is that they Pyure blend will also be less expensive due to the smaller amount required.

There are some sweeteners that I would not recommend using in this recipe. These include pure stevia or monkfruit as they do not provide enough bulk for the recipe to work. I also advise against using an allulose-based sweetener as I have not tested these in the recipe and I suspect that the texture of the final product will be very differentprobably softer.

What Are Some Other Keto Desserts

One that that many people find difficult when starting keto is that sugar is off limits. For many people that is a nonstarter. However, there are many great sugar alternatives which can help satisfy your sweet tooth and stay on your low carb diet.

My two favorite sweeteners is Swerve, which is a natural zero calorie sweetener that has no effect on your blood sugar. It comes in granular, brown sugar and confectioners. I also really like monkfruit sweetener, which is what I used here. For some Swerve can have a cooling effect after they eat so for those people monkfruit is a very good keto friendly sweetener .

For the most part, you can find a keto recipe for just about any classic dessert, however I wanted to share a few I love. One of my favorites are these Keto Cheesecake Stuffed Brownies. Bake Until Golden Brown

Using a cookie scooper or a spoon, scoop the cookies onto your prepared cookie sheet. The recipe will yield 16-20 low carb cookies depending on the size of your cookies. Bake for 15 minutes or until golden brown on top. Then let the chocolate chip cookies cool for 20 minutes before eating.

If you are nut free or just prefer coconut flour we do have a version below for nut free keto cookies. While that recipe requires a few more ingredients, its equally as good. Both flours are keto and gluten free so they will make a delicious recipe either way!

Sugar Free Dark Chocolate

To make these healthy keto cookies even much more yummier, I have added in chopped chocolate. Cause what is better than a chocolate chunk cookie? Right? To make sure we stay on track with our no sugar cookie recipe. I have here used a sugar free dark chocolate from amul. This particular type of dark chocolate does not have added sugar in it. Instead it has maltitol which is a keto friendly sugar alternative. Maltitol is a sugar alcohol, much lower in carbs than sugar and has lower glycemic index.

These cookies do not contain any sugar. It depends completely on the little sweetness from almonds and chocolate. If you wish you can add Erythritol/ Stevia into your dough.

How To Make Low Carb Cookies Crispy Or Chewy

When you make keto cookies, you go for the crispiness or softness.

Each one of us is in love with something else.

In general, to make cookies more on the crispy side, bake them at a lower temperature. They will have more time to spread and become thinner, quickly achieving crispiness.

It also helps if you flatten them before baking.

Not adding brown sugar helps big time if you go for crispiness.

Erythritol is known in our low-carb baking lifestyle to keep cookies crispiest the most.

A chewy keto cookie can be achieved by adding coconut flour.

This helps them to become more of a chewy cookie if you are looking for this texture.

Sugar Free Ice Cream Ingredients

Low Carb CHOCOLATE CHIP COOKIE BATTLE – The BEST Keto Chocolate Chip Cookies Recipe!

You need just four ingredients for this recipe: coconut milk, sweetener of choice , pure vanilla extract, and a pinch of salt.

Be sure to look for full fat canned coconut milk, not lite coconut milk or the cartons of coconutmilk beverage sold in the dairy case. I have not tried substituting heavy cream.

Sugar free options that work well for the sweetener include granulated erythritol or xylitol, a low-glycemic and natural sugar alternative with 40% fewer calories that is absorbed more slowly than sugar and doesnt have the same effect on insulin or blood sugar levels.

If youre not counting carbs or watching sugar intake, you can absolutely feel free to use your favorite all purpose sweetener, such as sugar, honey, or pure maple syrup.

I have not tried allulose or stevia in this frozen dessert and therefore cannot personally recommend it here. Be sure to report back if you experiment.
