This past summer, Womans World Magazine reached out and asked me to create a low carb soup recipe using chicken and lots of healthy low carb veggies for the Turbo Atkins Diet Soup feature they were running in the November 9th issue.

Of course I wanted this keto chicken soup recipe to be delicious, but I also wanted it to be undeniably healthy since so many critics are still under the misconception that a keto diet is all bacon, steak and cheese, with little to no vegetables.

Thats just not true or at least it doesnt have to be if you are mindful about where your carbs are coming from.

This Keto Chicken Soup Diet recipe is loaded with delicious veggies that are low in carbs, filling, and tremendously good for you making it the perfect complement to any low carb diet plan.

I love the simplicity of stuffed peppers, as Im sure many of you do too. Just stuff your peppers with your favorite ingredients and let your oven do the cooking.

These stuffed peppers offer a Mexican spin to your traditional stuffed peppers. The ground meat, corn, and rice are seasoned with Mexican spices and topped with Monterey Jack cheese.

The chipotle powder adds a nice heat. Perfect if you like it spicy.

Now, the carb count is higher because of the corn and the rice. To lower it, you can just skip the corn and replace the rice with cauliflower rice instead.

In case you dont know what Shrimp Hibachi is, its shrimp and veggies seared with a soy sauce mixture.

Succulent shrimp and fresh veggies are marinated in a tasty Hibachi marinade, then placed in an air fryer. What you get is a dinner that is sure to tantalize your taste buds.

And what would Shrimp Hibachi be without some fried rice? To reduce the carbs and calories, serve with cauliflower fried rice instead. Yum!

What Ingredients Are In These Low Carb Fajitas

For this dinner, I started with a package of chicken thighs. My package had 12 ounces, which was perfect for each serving to have 3 ounces. The amount of chicken is totally flexible. However, readjust the calories and macros if you use more chicken, and still divide it into four servings.

We love chicken thighs in our house. But, if you are serious about a strict calorie deficit like I was during my bikini prep, you can swap out chicken breasts to save a few calories!

Then, I sliced the chicken into strips.

Then, I also sliced bell peppers and a medium onion into strips. 3 bell peppers in total, each a different color.

Then, Ideally, Id have fajita seasoning. I dont love making my own, only because fajita seasoning is inexpensive, and I just rather buy some. But, since i didnt have any fajita seasoning, I just made my own.

For the homemade fajita seasoning, I used:

  • 1 tablespoon chili powder

Besides adding freshness, zucchini is very good for you. It is rich in vitamin A, a powerful antioxidant.

It is also a good source of manganese and magnesium, which you need for healthy bones.
