How To Make Keto Sugar Cookies

Low Carb & Sugar Free Chocolate Chip Cookies

These low-carb sugar cookies can be made in just a few simple steps.

  • Combine the almond flour, coconut flour, baking powder, baking soda and salt in a mixing bowl and set aside.
  • Using an electric mixer, cream the butter and monkfruit sweetener until well blended. Add the egg, sour cream and vanilla extract.
  • While the mixer is on low, add the flour mixture until well combined. Wrap the dough ball in plastic wrap and chill overnight.
  • Scoop the dough using a 1 inch cookie scoop and bake on a silicone lined baking sheet at 350 degrees F for 9-11 minutes, remove the cookies from the oven while they are still slightly soft in the center, they will finish cooking as they cool.
  • Allow the cookies to cool on the baking sheet for 10 minutes, then transfer to a wire baking rack to cool completely.
  • Soften Your Butter Naturally

    You dont want to overheat your butter by softening in the microwave or on the stove. Just cut it into slices and let it sit out for 10 to 15 minutes, and itll be perfect for creaming.

    Of course, if its summer or youve been cooking a lot, youll need less time. A kitchen that is much warmer than 70 degrees F will speed up this process.

    If youre in a hurry, you can soften the butter by placing it in an airtight bag and letting it sit in some warm water.

    How To Make Them Crispier

    If you want a crispier low carb oatmeal cookie we can make that happen. All you need to do is scoop the sugarless oatmeal cookie dough onto the tray and roll them, press them down much flatter than I did.

    A good rule of thumb when baking cookies is: the flatter they are, the crispier they will be. These cookies dont spread too much, so in order to get them flatter, you need to help them.

    How To Make Easy Keto Sugar Cookies

    1.) Mix your dry ingredients – almond flour / ground almonds, coconut flour, powdered sweetener, baking powder and xanthan gum, if using.

    I’ve used an erythritol monk fruit sweetener blend for this recipe. Erythritol works great in sweet Keto Recipes because it sets hard.

    Xanthan gum gives the cookies a better crumb structure, it is often used in gluten free baking. The recipe works without, but your cookies will be a little more brittle.

    2.) Add the wet ingredients. In this case, that’s just the butter and the vanilla extract. If you want cookies to taste utterly buttery, you need a decent-sized amount of butter

    TIP: To elevate the taste of these low carb sugar cookies, scrape out the seeds from 1 vanilla pod and use this in place of the vanilla extract. This is not the cheapest option, but will taste AMAZING.

    3.) Aaaaand mix! I like to use my trusted old food processor for this, but you can use a stick blender or an electric mixer.

    TIP: The dough will be soft in the beginning – let it sit a couple of minutes and wait until the coconut flour absorbs some of the moisture.

    4.) Now get yourself some cling film and roll the sugar cookie dough into a log that’s roughly 6 cm in diameter. Wrap the log in cling film and place in the freezer for 15-20 minutes or twice as long if you put it in the fridge instead. It’s much easier to handle when it’s cold.

    6.) And this is how your Keto sugar cookies will look like after 8-10 minutes in the oven – lightly browned on the edges.

    It only takes about 5 minutes to mix up the batter, and then youll have a delicious treat ready to be enjoyed throughout the week!

    Step 1: Preheat oven to 350F and line a cookie tray with baking paper. Set aside.

    Step 2: Add the erythritol to a Nutribullet or blender and blend until powdered. Set aside. If using a confectioners low-carb sweetener, you can skip this step.

    Step 3: Add all of the ingredients into a medium mixing bowl and mix until a smooth, glossy dough forms.

    Step 4: Roll about 2 tbsp of dough between your palms to form a ball, then place on the prepared cookie tray. Repeat until all dough has been used. You should end up with 12-14 cookies.

    Step 5: Use a fork to flatten the cookies, creating a criss-cross pattern across the top.

    Step 6: Bake the cookies for 12-15 minutes.

    Step 7: Remove from the oven and allow to cool for 25 minutes on the baking tray, then transfer to a cooling rack for another 15 minutes.

    Now your peanut butter cookies are ready to enjoy!

    That is an easy fix! If you want even FLUFFIER keto chocolate chip cookies, then you add in the optional coconut flour. The above cookies have no coconut flour and the below cookies DO have the coconut flour. Do you see the difference?

    AND if you want them even FLUFFIER, then use the coconut flour and plop them down without smoothing out the edges. Meaning, dont roll a ball, just scoop and blob and plot it down.

    Yes, you can freeze Keto oatmeal cookies!! Isnt it great to be able to freeze cookies and pull them out whenever you want a snack?

    To freeze these keto oatmeal cookies, place them in either a Ziploc bag or an airtight container, then place them in the freezer. They will stay fresh for up to 3 months.

    When ready to eat, pull them out and place them on the counter until thawed.

    How To Make Perfect Keto Chocolate Chip Cookies

    I worked hard on this recipe and tested it multiple times. Here are my best tips for getting it right:

  • Start with good almond flour: This recipe wont work with coconut flour, and you need a finely ground almond flour for the best consistency. You may be able to use other nut or seed meals but the texture wont be as fine.
  • Weigh the flour if possible: In testing this recipe, I found that right around 200g of almond flour was just right.
  • Use Swerve Brown: This is hands down the best brown sugar replacement and critical to the cookies. I make note of alternatives in the Frequently Asked Questions but I cant guarantee the same taste or texture with other sugar substitutes.
  • Baking soda, not baking powder: This makes a big difference, as it allows the cookies to spread more during baking. They also brown more nicely and become softer and puffier.
  • Add melted butter: Rather than creaming the butter with the erythritol, you stir melted butter into the dry ingredients. Its easier but it also gives them a chewier texture.
  • Make them a little bigger: You can make smaller cookies and get 24 , but they arent quite as impressive looking. I found that making 18 larger cookies made them deliciously soft and satisfying. It also allowed me to add more sugar-free chocolate chips and some chopped nuts.
  • Bake until just golden: The cookies will be very soft when you take them out of the oven, but they will firm up as they cool.
  • Can Sugar Free Cookies Actually Taste Good

    Growing up, whenever wed go to my grandparents house there would be two sections of treats in the cabinet.

    One was the regular, full-of-fat-and-sugar junk food section specifically for us kids. The other was comprised of sugar-free JELL-O, granola bars, and low carb cookies for my grandfather who had Diabetes.

    One afternoon, I was curious and snuck off with one of the sugar free peanut butter cookies in the not for children stash.

    All I remember of that cookie was an artificial aspartame taste that lingered long after the first bite was gone. And I definitely didnt take a second bite!

    Thankfully, sugar free desserts have come a long way, and you have numerous options from which to choose if you need to bake without sugar.

    How To Make Crispy Keto Chocolate Chip Cookies:

    • Bake them for longer. Crispy low carb chocolate chip cookies need to brown just a bit more. Youll want them a darker golden color on the edges.
    • Use erythritol for the sweetener. It crisps up more than allulose does.
    • Omit the xanthan gum. This ingredient makes for a chewy texture, so skip it if you want crispy.
    • Turn off the oven and prop it open with a wooden spoon. Keep an eye on them if you do this so that they dont burn too much, but otherwise keep them in there as long as you can because that little bit of air flow crisps them up perfectly. This makes for extra crispy keto chocolate chip cookies!
    • Theyll crisp up as they cool, so leave them out afterward!

    How Long Do They Last

    Making Your Perfect Chocolate Chip Cookie

    Low Carb Sugar Free Peanut Butter Cookies

    Everyone has their perfect version of chocolate chip cookies.

    For the texture, its best to play around with the baking time. For a cookie with a soft, gooey center, I recommend taking them out of the oven around 16 minutes. For a crispier cookie with a cakey texture, leave them in for 19 minutes.

    When shaping the cookies, I find that an ice cream scoop or tablespoon works well to measure out each cookie. Then, I use my palm or a fork to press them down into a round cookie shape.

    And of course, feel free to add in any recipe extras! Chopped walnuts are a delicious way to add a nice crunch. You could also substitute other sugar-free chips such as white chocolate or peanut butter.

    How To Make Oatmeal Cookies Keto

    As I already mentioned oatmeal isnt exactly a great option for Keto due to its carb content. However, you can still make low carb oatmeal cookies with almond flour and a few other ingredients as a substitute. What are those other ingredients you ask?

    We chose to use a combo of oat fiber and unflavored beef gelatin to give both the texture and the flavor of oatmeal cookies. We also used slivered almonds to mimic the texture of oats.

    Another clever substitution that can be used instead of oats, is coconutflakes. You can add chopped coconut flakes to your keto oatmeal cookies but its not my favorite so thats why I chose to use almonds instead.

    How To Make Giant Chewy Keto Chocolate Chip Cookies:

    Add the butter and sugar to a stand mixer and beat until combined and fluffy .

    Use a rubber spatula to scrape the sides of the bowl and beat in the egg and vanilla extract.

    Scrape the sides of the bowl again and add the remaining dry ingredients except for the chocolate chips. Beat on high speed until everything is incorporated and a sticky dough forms. Beat in the chocolate chips.

    Use the rubber spatula to scrape the sides and bottom of the bowl again to ensure all of the ingredients are mixed together very well. Refrigerate the dough for at least 1 hour before baking.

    When youre ready to bake, preheat the oven to 350 degrees F and line a large cookie sheet with parchment paper.

    Measure out cup of the dough and place it on the baking sheet. You can also use a cookie scoop if you own one. Repeat for remaining cookie dough . Note that the dough will spread during the baking process so be sure to leave ample room between balls of dough.

    Bake for 11 to 15 minutes, or until the cookies reach your preferred level of done-ness. Chewy cookies will need 10 to 11 minutes on the dot and crispier cookies will require 13 to 15.

    Remove cookies from the oven and allow them to cool for a few minutes before transferring them to a wire rack and digging in! If you go after them right away, they will fall apart easily, so for best results, wait for at least 15 minutes before diving in.

    Do I Have To Chill The Sugar Cookie Dough

    Yes! Chilling the dough is absolutely essential. The cookies have the perfect texture when they have been chilled overnight. However, it is possible to bake these cookies after the dough as chilled as little as two hours.

    Cookie dough is chilled to solidify the fat in the dough, which prevents the cookies from spreading too much. If you do not chill the dough, or place the dough on an already warm baking pan it will result in a thin cookie that has spread too much.

    • On the counter or in the pantry: Your sugar-free chocolate chip cookies will store perfectly at room temperature for a few days.
    • In the fridge: If you want them to last longer, theyll keep in the fridge for 10 days.
    • Freeze: Of course for the longest storage, you can freeze the cookies. Freeze in a single layer on a parchment lined baking sheet, then once solid, transfer to a freezer bag.

    What Is Palm Oil

    Palm oil is a unique oil because it is solid at room temperature

    But its different because it has NO flavor and NO oily consistency. This makes it the PERFECT oil for frosting. It tastes just like bakery frosting to me! This is my go-to frosting for cupcakes, Keto Oreos, and cutout cookies, too!

    A note about Environmental Consciousness

    Ive gotten several comments in my recipes using palm oil over the years saying, What about deforestation? since some companies destroy the rainforest to harvest palm oil. This is a valid concern, but there is a solution: a sustainable brand.

    I only use and recommend Spectrum brand palm oil which has been actively combatting deforestation for many years. You can find the companys stance on this issue on their website.
